Chicken Pot Pie


Ingredients
Filling:
2 medium chicken breasts cubed
1 cup chopped potato
1 cup frozen mixed veggies
3 tbsp butter
1/ 4 medium onion chopped
3 1/2 tbsp all-purpose flour
1/4 tsp of freshly ground black pepper
1 tsp Italian seasoning
pinch of salt
pinch of cayenne pepper
3 cups of chicken broth
1/2 cup milk
Crust:
1 3/4 cups sifted white flour
1 tsp salt
7 1/2 tbsp canola oil
7 tbsp super cold water







Directions
Preheat oven to 400 ̊F (200 ̊C). In a medium pot, combine chicken, potatoes and frozen veggies. Add enough chicken broth cover and boil for 10 - 15 minutes. Remove from heat and drain (save the chicken broth). Set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour and spices. Slowly stir in 3/4 cup chicken broth and 1/2 cup milk. Simmer over low heat until thick. Add the chicken mixture. The mixture should be thick like a stew.
Crust
Sift flour and salt into a bowl. Pour the oil and water into a well in the center of the flour mixture. Use a fork to stir it together until it just sticks together into a ball. Use about 2/3 of the dough for the bottom crust and the remaining 1/3 for the top. Roll out the larger section and lightly press it a round pie or cake pan. Fill each up with the chicken mixture. Roll out the smaller section and place over top. Press the edges together with a fork and cut small slits into the top to let steam escape.

Bake for 20-25 minutes or until crust is golden brown and the filling is bubbly. Wait about 10 minutes before cutting into the pie and enjoy!

Recipe makes one delicious pie.

*Note*
You can substitute frozen veggies for fresh ones if you’d prefer, I just used a frozen mix of carrots, peas, green beans, and corn, because it’s what I had on hand.

Lunchtime Cheesesteaks



Last week, my lovely boyfriend had a double lunch period and surprised me with this yummy lunchtime sandwich. The hearty amount of meat piled high on top of a fresh baguette, was the perfect way to hold me over until work was finished. Check it out below to see how he did it.




Ingredients
 - shaved steak (400 grams)
 - 1 green pepper thinly sliced
 - 1 small onion thinly sliced
 - 4 large cloves of garlic minced
 - 1 french baguette
 - 1 tbsp of olive oil
 - 1 cup grated cheddar cheese
 - ground pepper to taste





Directions
Pour olive oil into a frying pan. Add garlic and beef. Cook over medium heat. If your beef is frozen, like ours was, it is important to stir and separate the meat while cooking. Once the beef is almost cooked, add the onion, green pepper, and ground pepper. Sauté for about 5 minutes.




Cut the baguette in half both lengthwise and width wise to make 2 sandwiches. Place the baguette on a cookie sheet and spoon the mixture on top of the bread and top with grated cheese. 

Place your sandwiches into the oven and broil until the cheese is melted.


Best. Lunch. Ever.

White Chicken and Spinach Pizza

I Love Pizza.

Seriously, though who doesn't? One of my former kindergarten students was literally the only person I'd ever met who didn't like pizza and I was both shocked and applauded. To be fair the kid was 6. He'll change his mind. 

Throw chicken, onions, and sooooooo much garlic into a pan and cook.

While that was cooking, I chopped up some delicious fresh spinach.


Then, my lovely go to guy, rolled out the pizza dough, because he's so much better at it.


Now, assemble!

 

Pop in the oven for 10ish minutes and then resist the urge to eat immediately.


Ingredients
2 chicken breasts (chopped into small pieces)
5 cloves of garlic minced
1/2 small onion chopped
sprinkle of salt and pepper
1 cup of fresh spinach chopped
1 cup of shredded mozzarella cheese (or more if you love cheese!!)
2 tbsp of olive oil
1 tsp of dried basil
sprinkle of Italian seasoning
sprinkle of cayenne pepper
1 ball of pizza dough (homemade or prepacked)

Preheat oven to 475   ̊F or 220   ̊C. Toss chicken, onions, salt/pepper, and garlic in a pan with a drizzle of olive oil and cook over medium heat. Once chicken is cooked through, remove from the heat and set aside. Roll out your pizza dough and brush the olive oil across the top of your crust. Next, spread your chicken mixture evenly across the top of the pizza. Sprinkle the dried basil on top. After that, spread the chopped spinach over top. Finally, sprinkle your cheese across the top. Place the pizza into the oven about 9 - 11 minutes or until the cheese is bubbly and golden brown around the edges.

Serve it up with a little parmesan, or hot sauce for extra seasoning.
Makes one pizza.
